Bisque de homards
Lobster bisque (for a more detailed recipe go to the Noble Pig) - loosely based on a recipe by either Julia Child or Dione Lucas (my go to gals) - in a large saucepan, melt butter. Add shallots, cook until soft. Whisk in flour. Add tomato paste, then the shellfish (chicken will also do) stock. Heat until thick and bubbling. Add sherry and lobster, bring to the boil. Blend. Gradually stir in cream. Simmer and heat thoroughly. Serve.
These would be perfect.

Mamacita - oops, it should be Dione, not Dionne. I must stop doing these late at night.
Against my better judgement I want those plates.
Chef Lucas was the first woman to graduate from the French cooking school L'Ecole du Cordon Bleu. And, the first woman to have a cooking show on television (some 20 years before Julia Child).
The Dione Lucas Book Of French Cooking - fantastic basic book, great for method. Some of the ingredients are a bit too rich for how we eat now.

Yum. I'm off to the fish mongers tomorrow and I think you've given me a good idea for dinner. Of course today is cold, tomorrow it will be thirty degrees warmer and into the 60'S (ºF) at the weekend.
